Bacon cheddar kale quiche

Ingredients

4 ozs grated cheese - cheddar, Monterey jack, or mozzarella


1 cup kale, chopped small

2 green onions, sliced fine

4 slices bacon

6 eggs

¾ cup half&half

¼ tsp salt

tsp pepper


Directions

Preheat oven to 375*. Cook bacon until fat renders. Add kale and cook until well wilted. Allow to col slightly. Beat eggs with half&half, salt, and pepper. Add ½ the cheese, and the bacon/kale mixture. Pour into pie crust. Bake 50 minutes, sprinkling remaining cheese on top ½ way through. Quiche is done when the center is no longer liquid. Remove and cool completely. Serve at room temperature.
